Well prepared stocks will be used to create a variety of flavorful soups and sauces in this class. The techniques for creating sauces thickened with various methods are taught in this class, such as the creation and use of roux, starch-based thickeners, & beurre monte.

Hors d'oeuvres

Canapes, finger foods, charcuterie, garnish techniques, and table displays are all explained and created by students in this class. Students can use the skills learned in this class to host a wonderful cocktail party at home.

Poultry and Egg Cookery

Learn how to properly break down whole chicken & other poultry, prepare various egg dishes, and create poultry-based entrees. Dishes will be finished with egg based sauces such as hollandaise, bearnaise, cold emulsions, and sauces “al la minute”.

Creative Meat, Vegetable & Grain Cookery

Homemade Pasta and Pasta Dinners

Learn how to make various pasta doughs and shapes from scratch. In this class students will make several sauces, vegetables, and completed dishes from start to finish. Students will learn how to make pasta dough from scratch, create several traditional shapes, properly cook their finished pasta shapes and serve their dishes for a wonderful easy dinner meal.

Seafood Cookery at its Finest

The perceived challenges of cooking various seafood are quickly addressed in this class. Students can expect to finish this class with a better understanding, and a higher level of confidence, in their ability to create amazing dishes with a few simple steps.
Shellfish, roundfish, and flatfish are all used in this class. Appropriate seasonal vegetables, grains, and accompaniments are included in this lesson.

Basics of Bread Making

Students will learn the basics of yeast risen doughs, quick breads, and flatbreads. Toppings for flatbreads, along with dips, sauces, & spreads will be made from scratch.
Understanding the mechanics of leavening agents, the development of gluten, and the effects of local climate, humidity, ambient temperature, and sourcing of ingredients will be covered.

Regions of France

In this class students will take a delightful culinary tour of French cuisine where a variety of dishes will be created. Appetizers, entrees, and a quick dessert will be included in this wonderful class. Students are encouraged to get creative with their ingredients under the guidance of the Chef Instructor.
